Sometimes, you just have to serve Schmann
Dec. 10th, 2006 05:56 pmWhen faced with an almost-empty refrigerator and a hungry family, it's time for Schmann:
Beat 3 eggs
Add 1/2 cup milk
Stir in 1 cup sugar
and 1 1/4 cup flour (give or take)
Heat a large frying pan with a generous coating of vegetable oil until hot.
Pour all the batter in, making one gigantic pancake.
Nudge it gently while cooking to ensure that the bottom doesn't burn.
After five minutes or so, cut it into fourths and flip each quadrant. Turn heat down.
Cook another five minutes or so, until it's cooked through.
Each quadrant serves one person. Sprinkle with ground cinnamon and serve with a side of unsweetened apple sauce.
